Display Name Change requests in the Global Address List (GAL), otherwise known as your O365 display name, should be directed to the accounts team, IAMO (Identity Management in Footprints)

While customers may request that their name be displayed different in Office 365, IAMO has decided to not make any further changes and requests that customers speak with either HR or the Registrar to correct their record. The following message may be sent to the customer to explain:
While ITaP's Identity and Access Management team has the ability to change display names in Office 365, that is not the most effective place to make the change.
Changing display names in ITaP's systems may fix the "appearance" of the desired name, however, any changes upstream from Human Resources or student systems would push their changes back through those same systems. This would make the display name revert to the same display name as prior to the ITaP change.
NOTE: Any changes that ITaP makes do not change the appearance in HR or student systems.
As a result, the best solution is to work with the data owner (Humans Resources or the Registrar) to have your information represented accurately across all systems.
